Salt cucumber in a colander and let sit 30 minutes. Squeeze and pat dry.
In a small bowl combine cumin, coriander, paprika, 1/2 teaspoon salt and pepper
Cut pitas into eight wedges, arrange on single layer on baking sheet. Spray with cooking spray
