Step 1: Salt cucumber in a colander and let sit 30 minutes. Squeeze and pat dry.
Step 2: In a small bowl combine cumin, coriander, paprika, 1/2 teaspoon salt and pepper
Step 3: Cut pitas into eight wedges, arrange on single layer on baking sheet. Spray with cooking spray
Step 4: Sprinkle 3/4 tsp. seasoning mix over pita. Broil 3-4 inches from heat on both sides. Cool on wire rack
Step 5: In skillet cook lamb with rest of seasoning mix until no longer pink. Add beef broth and cornstarch combined and cook until thickened.
Step 6: In a small bowl combine cucumber, lemon juice, zest and yogurt and salt and pepper.
Step 7: Arrange pita on a platter. Layer with lettuce, lamb olives and tomatoes. Serve with cucumber sauce
