Meat Marinade

"We love using this marinade for meat we with to stir fry or for minute steak. If using a prime cut eg fillet steak do not marinade any more than 20 minutes for cuts such as rump steak or skirt (thinly sliced) no more than 1 hour for if marinated for too long it can send the meat rancid. My MIL learnt a similar recipe when doing a Chinese cooking course about 40 years ago and it seems many Chinese restaurants used to marinade skirt steak and pass it off as fillet steak, in recent years there have been restaurants prosecuted for such practices. The marinade is enough for about 500 grams of meat. The chilli and the garlic were not part of the original recipe just something we added."
