Step by Step Method

Step 1

Mix potatoes, onion, celery, pickles, relish, and chopped eggs.

Step 2

Season with salt and pepper to taste.

Step 3

Add mayonnaise.

Step 4

Chill for about 2 hours.

Step 5

Just before serving

Step 6

Halve the remaining 4 eggs, and place on top of the salad as decoration.

Step 7

Sprinkle salad with parsley and paprika to taste

What a tasty potato salad! It has all the elements of an oldie but GOODIE. So good and it went so well with both our fish and steak. Even my hubs who is not a fan of potato salads that contain mayo, commented a few times how much he liked it. Surprisingly I thought I had parsley, but didn’t, so luckily had cilantro which became a substitution. Added it to the body of the potato salad and forgot to sprinkle it on until the last minute, which both pictures will reflect. Thumbs up from all of us. Thanks so much, Dee, for sharing.
