Step by Step Method
Step 1
In a bowl or measuring cup combine the yogurt, green onions and curry powder.
Step 2
Place potatoes in a microwave-safe dish; add milk. Cover tightly and cook until tender but not mushy (10-15 minutes -- watch carefully). Remove from microwave.
Step 3
Add yogurt mixture to potatoes and mash.
Step 4
Season with salt and pepper and garnish with parsley.
