  • 4 green onions, sliced
  • 1/2 to 1 teaspoon curry powder
  • 2 pounds red potatoes (peeled and cut into eighths)
  • 1/4 cup milk
  • Salt
  • Pepper
  • Parsley, chopped

How to Make

  • Step 1: In a bowl or measuring cup combine the yogurt, green onions and curry powder.

  • Step 3: Add yogurt mixture to potatoes and mash.

  • Step 4: Season with salt and pepper and garnish with parsley.
