"This is the 2nd of 2 recipes I'm entering from THE KIDS COOK MONDAY program aimed at making Monday a family meal night. Per the intro: ""These cheesy mashed potatoes transform into hills sprinkled w/parsley greenery. Kids will have fun mashing the potatoes & shaping them into mountains in this whimsical side dish. Try them alongside a green vegetable & a lean, child-friendly protein. Enjoy!"

Step by Step Method
Step 1
Together: Preheat oven to 450F. Spray the baking sheet w/cooking spray.
Step 2
Adult: Peel the potatoes & cut them into small cubes.
Step 3
Together: Place potatoes in a saucepan. Put bouillon cubes in the pan w/the potatoes. Add water until it barely covers the potatoes. Put the lid on. Turn heat to medium & cook until the water begins to boil. Cook for about 30 min, or until the potatoes are very soft when you poke them w/a fork.
Step 4
Adult: Drain the potatoes & put them back in the pan.
Step 5
Kid: Mash the potatoes w/a potato masher.
Step 6
Together: Add milk, cream cheese, sour cream & cheddar cheese to potatoes. Mix well.
Step 7
Kid: Scoop the mashed potatoes into 6 hills on the baking sheet. Smooth the hills into ovals using a wooden spoon.
Step 8
Adult: Put the baking sheet in the oven. Bake for 10-15 min, or until the hills are golden brown. While the hills are baking, snip the parsley into little pieces using kitchen shears. Using potholders, take the baking sheet out of the oven.
Step 9
Kid: Sprinkle the hills with chopped parsley & serve.
