Ingredients

The ingredients are:
  • 2 pounds Yukon Gold potatoes
  • 2 cubes reduced-sodium chicken bouillon (water)
  • 1/4 cup fat-free milk
  • 4 ounces fat-free cream cheese (at room temp)
  • 1/4 cup fat-free sour cream
  • 1/2 cup low-fat shredded sharp cheddar cheese
  • 2 teaspoons chopped fresh parsley

How to Make

  • Step 1: Together: Preheat oven to 450F. Spray the baking sheet w/cooking spray.

  • Step 2: Adult: Peel the potatoes & cut them into small cubes.

  • Step 3: Together: Place potatoes in a saucepan. Put bouillon cubes in the pan w/the potatoes. Add water until it barely covers the potatoes. Put the lid on. Turn heat to medium & cook until the water begins to boil. Cook for about 30 min, or until the potatoes are very soft when you poke them w/a fork.

  • Step 4: Adult: Drain the potatoes & put them back in the pan.

  • Step 5: Kid: Mash the potatoes w/a potato masher.

  • Step 6: Together: Add milk, cream cheese, sour cream & cheddar cheese to potatoes. Mix well.

  • Step 7: Kid: Scoop the mashed potatoes into 6 hills on the baking sheet. Smooth the hills into ovals using a wooden spoon.

  • Step 8: Adult: Put the baking sheet in the oven. Bake for 10-15 min, or until the hills are golden brown. While the hills are baking, snip the parsley into little pieces using kitchen shears. Using potholders, take the baking sheet out of the oven.

  • Step 9: Kid: Sprinkle the hills with chopped parsley & serve.
