Step 1

Together: Preheat oven to 450F. Spray the baking sheet w/cooking spray.

Step 2

Adult: Peel the potatoes & cut them into small cubes.

Step 3

Together: Place potatoes in a saucepan. Put bouillon cubes in the pan w/the potatoes. Add water until it barely covers the potatoes. Put the lid on. Turn heat to medium & cook until the water begins to boil. Cook for about 30 min, or until the potatoes are very soft when you poke them w/a fork.

Step 4

Adult: Drain the potatoes & put them back in the pan.

Step 5

Kid: Mash the potatoes w/a potato masher.

Step 6

Together: Add milk, cream cheese, sour cream & cheddar cheese to potatoes. Mix well.

Step 7

Kid: Scoop the mashed potatoes into 6 hills on the baking sheet. Smooth the hills into ovals using a wooden spoon.

Step 8

Adult: Put the baking sheet in the oven. Bake for 10-15 min, or until the hills are golden brown. While the hills are baking, snip the parsley into little pieces using kitchen shears. Using potholders, take the baking sheet out of the oven.

Step 9

Kid: Sprinkle the hills with chopped parsley & serve.

Daily Inspiration

Loved these oven-baked mashed potatoes. They are so flavorful and creamy with the addition of the cream cheese and sour cream. The only change I made was to place the potatoes in a casserole dish vs. making the "hills". I'll try doing this when my grandkids are over as I know they will love them that way. Nancy : )
