"This was one of his favorite meals. It was probably pretty plain as this one is. Most folks pound the flour into the steak with a meat mallet. Some folks add mushrooms, probably canned, you can do that if you want. This was most probably served with mashed potatoes and green beans and greens of some kind."

Step by Step Method
Step 1
Get dredge ready, mixing all ingredients.
Step 2
Lightly season the steaks both sides.
Step 3
Flour the steaks and pound the flour in.
Step 4
Heat bacon grease, you could use oil but southern cooks use bacon grease.
Step 5
Fry steaks until browned adding onions half way through.
Step 6
Remove and add 3 tablespoons dredge flour to grease.
Step 7
Brown and season lightly remembering that bouillon is salty, but back in the day they liked salt more than they do now.
Step 8
Add bouillon to boiling water.
Step 9
Dissolve and add to flour mixture.
Step 10
Whisk until smooth.
Step 11
Add beef and onions back to skillet and simmer for 15 minutes until steak is tender and gravy is thick.
Step 12
Check seasoning.
