"This is a tasty version of roasted bell peppers that makes a great side, appetizer or topping for salads, etc. NOTE: If roasting the red bell peppers yourself, I have not added this time to the cook time."

Step by Step Method

Step 1

Slice the roasted bell peppers into strips and then cut in half, if necessary (depends on how large the peppers are).

Step 2

Place the peppers in a small bowl and add the remaining ingredients. Stir gently making sure all is distributed evenly. Cover the bowl with plastic wrap and refrigerate and let sit to meld all those flavors. When serving, make sure that peppers come to room temperature.

Wowzers! By far the best marinated peppers I've had. This is going straight to my "Best Of 2024" list. The flavors are incredible. I waited until the last minute to add the basil so it would be fresh and green. And served it as a side. I couldn't stop picking at the leftovers - so it's a wonder there are any at all!
