Ingredients

The ingredients are:
  • 12 ounces Roasted red bell peppers (can use jarred)
  • 2 tablespoons capers
  • 2-3 garlic cloves, finely minced
  • 1 tablespoon olive oil
  • 1 - 2 tablespoons balsamic vinegar (the amount depends if it's an aged vs. not so aged. The aged is sweeter and less vinegary which may require using more)
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped (optional)

How to Make

  • Step 1: Slice the roasted bell peppers into strips and then cut in half, if necessary (depends on how large the peppers are).

  • Step 2: Place the peppers in a small bowl and add the remaining ingredients. Stir gently making sure all is distributed evenly. Cover the bowl with plastic wrap and refrigerate and let sit to meld all those flavors. When serving, make sure that peppers come to room temperature.
