Step by Step Method
LAMB
Step 1
Combine first 6 ingredients (maple syrup - red pepper flakes) in a shallow dish or large zip-top plastic bag; add lamb chops. Cover or seal, and chill up to 8 hours, turning occasionally.
Step 2
Sprinkle chops evenly with salt and pepper; place chops on a lightly greased rack in a broiler pan.
Step 3
Broil chops 3-inches from heat; 5 - 7 minutes on each side or to desired degree of doneness (KEEPING A SERIOUS HAWK EYE ON THEM to prevent them from being overdone). Remove from broiler and cover loosely with aluminum foil, and let stand for 5 minutes. Serve with Zesty Horseradish Sauce. Makes 4 main-dish or 8 appetizer servings.
ZESTY HORSERADISH SAUCE
Step 4
Stir together all ingredients. Cover and chill until ready to serve.
Step 5
Leftover horseradish sauce can be refrigerated up to 1 week.
