"I LOVE lamb chops and wish the rest of my fam did too. This recipe's base of maple syrup and Dijon mustard creates a sweet, slightly tangy crust. NOTE: the lamb marinating time is not included in the overall prep. time."

Step by Step Method

LAMB

Step 1

Combine first 6 ingredients (maple syrup - red pepper flakes) in a shallow dish or large zip-top plastic bag; add lamb chops. Cover or seal, and chill up to 8 hours, turning occasionally.

Step 2

Sprinkle chops evenly with salt and pepper; place chops on a lightly greased rack in a broiler pan.

Step 3

Broil chops 3-inches from heat; 5 - 7 minutes on each side or to desired degree of doneness (KEEPING A SERIOUS HAWK EYE ON THEM to prevent them from being overdone). Remove from broiler and cover loosely with aluminum foil, and let stand for 5 minutes. Serve with Zesty Horseradish Sauce. Makes 4 main-dish or 8 appetizer servings.
