Step by Step Method
Beat eggs and sugar together until thick.
Add oil and vanilla and mix well.
Stir in flour, baking powder, and almonds.
Pour batter into lightly oiled and floured 9"x5"x3" loaf pan just to cover bottom of pan.
Sprinkle on some of the cinnamon.
Add another layer of batter and cinnamon.
Continue until all of the batter and cinnamon are used.
Bake at 350' F. (preheated) 20-25 minutes or until golden brown.
Bread will be dense. Remove from pan, cool on wire rack.
Cut into ½-inch slices. Put each slice on lightly oiled baking sheet and toast in 400' oven 5-6 minutes.
