Ingredients

The ingredients are:
  • 3 eggs
  • 1/3 cup sugar
  • 2 tablespoons oil (vegetable oil)
  • 1 teaspoon vanilla
  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup chopped almonds (blanched)
  • 2 teaspoons ground cinnamon

How to Make

  • Step 1: Beat eggs and sugar together until thick.

  • Step 2: Add oil and vanilla and mix well.

  • Step 3: Stir in flour, baking powder, and almonds.

  • Step 4: Pour batter into lightly oiled and floured 9"x5"x3" loaf pan just to cover bottom of pan.

  • Step 5: Sprinkle on some of the cinnamon.

  • Step 6: Add another layer of batter and cinnamon.

  • Step 7: Continue until all of the batter and cinnamon are used.

  • Step 8: Bake at 350' F. (preheated) 20-25 minutes or until golden brown.

  • Step 9: Bread will be dense. Remove from pan, cool on wire rack.

  • Step 10: Cut into ½-inch slices. Put each slice on lightly oiled baking sheet and toast in 400' oven 5-6 minutes.
