"It was recently recommended by my Gastroenterologist to follow the low FODMAP diet to try to eliminate what I call gut flare ups. The goal of following a low FODMAP diet is to eliminate foods that cause IBS symptoms and then you slowly introduce high FODMAP foods, one at a time. This helps you determine what foods cause you to have flare ups. I was lucky enough to have coverage to pay for a dietitian, but I find most recipes in the meal plan offered to me so bland, it made it difficult for me to stay on track. So, I researched what was allowed and not, how much of this and that was acceptable and tried my best to develop recipes that worked for me. This recipe comes together so easily and tastes amazing!! I make my own garlic infused oil by simmering 4 smashed garlic cloves in 1/2 cup oil over low heat for 30 minutes, but you can buy a certified low FODMAP garlic infused oil online or in the natural food aisle at your favourite grocery store."

Step by Step Method

Step 1

Heat oven to 375 degrees Fahrenheit.

Step 2

Place the peanuts on a parchment paper lined baking sheet and cook for 15 to 20 minutes or until the peanuts are roasted and browned, giving the pan a shake at about the 10 minute mark.

Step 3

Take roasted peanuts out of the oven and set aside.

Step 4

Season the pork strips with salt and pepper and set aside.

Step 5

Heat the oil to medium-high heat and add the ginger and cook for 1 minute.

Step 6

Add the pork strips, cook until pork begins to brown.

Step 7

Add the broccoli, red peppers, tamari and sugar and mix well.

Step 8

Cook until the vegetables are al dente then stir in bok choy and roasted peanuts.

Step 9

Cook until bok choy is wilted.

Step 10

Stir the cornstarch, water and sesame oil together and pour over the stir fry, stir and cook until sauce is thickened.

Step 11

Serve with cooked rice and Enjoy!

This came together fast, with tasty results. The kids enjoyed theirs over rice, and I just had the stir fry. Love all of the vegetables! Made for Billboard Tag, here in the forums.
