Step by Step Method

Step 1

Cook the pasta according to the package directions; drain the pasta (reserve 1 cup of the cooking water). Return pasta to the pot.

Step 2

Meanwhile, heat the oil in a medium skillet over medium heat. Add the pine nuts and garlic and cook, stirring frequently, until golden, 1 to 2 minutes. Add the asparagus and cook, tossing occasionally, until just tender, 2 to 3 minutes.

Step 3

Add the asparagus mixture to the pasta and season with salt and pepper; toss to combine. (Add some of the reserved cooking water, if desired.)

Step 4

Sprinkle with the Parmesan before serving.

So quick and easy! I halved this recipe and the only part I changed was to add about 2 tablespoons of cream. Topped with Grana Padano and grated parmesan this made for one fantastic meal, which I truly did enjoy all to myself!

Love this fast and easy pasta! Did have to make a couple of changes. Cut the recipe to two serves, did not have pine nuts, so used unsalted sunflower seeds and a good splash of lemon juice. Did switch up the linguine for soba noodles. We both thoroughly enjoyed it! Thanks for sharing another wonderful recipe Mike! Made for Billboard Recipe Tag.
