"I needed Ponzu for a dish I was making, and they didn't have it in my grocery store, so I made my own. You can use this sauce in any recipe calling for Ponzu Sauce, or use on seafood, grilled meats and vegetables for a splash of savory flavor. It has the perfect balance of salty, tangy and sweet to enhance a wide variety of dishes, and is great to dip your sushi in. NOTE: Make sure you zest the lemon/lime before squeezing. Bonito flakes can be found at your local Asian Market and in some of your grocery stores, in the Asian section. "

Step by Step Method

Step 1

In a medium size saucepan, heat soy sauce, vinegar, sugar, and bonito flakes (if using) stirring until the sugar dissolves. Remove from heat.

Step 2

Add the lemon (or lime) juice and orange juice, and stir in.

Step 3

Stir in chopped scallions and lemon (or lime) zest.

Step 4

Cool to room temperature. Cover, and let sit out for a few hours or overnight, for flavors to blend.

Step 5

Strain sauce, and refrigerate until ready to use. It lasts for several days in the refrigerator.

I had some salmon and decided to use this sauce as part of the marinade in my recipe. It was delicious and a real hit with us. I plan to add this to my fridge on a regular basis, because it's that good, and much cheaper than buying it in the store!
