Ingredients

The ingredients are:
  • 2 cups soy sauce, low sodium is fine
  • 1/2 cup rice wine vinegar
  • 1/2 cup sugar
  • 1/2 cup (about 1/4 ounce) dried bonito flakes, optional
  • Juice of 1 lemon, ( lime may be substituted)
  • Juice of 1 orange
  • 1 scallion, finely chopped
  • Zest from half lemon (or lime)

How to Make

  • Step 1: In a medium size saucepan, heat soy sauce, vinegar, sugar, and bonito flakes (if using) stirring until the sugar dissolves. Remove from heat.

  • Step 2: Add the lemon (or lime) juice and orange juice, and stir in.

  • Step 3: Stir in chopped scallions and lemon (or lime) zest.

  • Step 4: Cool to room temperature. Cover, and let sit out for a few hours or overnight, for flavors to blend.

  • Step 5: Strain sauce, and refrigerate until ready to use. It lasts for several days in the refrigerator.
