Linda's Italian Salad with Spicy Italian Dressing

"This is one of my creations that I serve with Chicken and Veal Marsala, Fettuccine Alfredo, and Italian Garlic Bread for a special occasion. It is a great salad to serve with any dinner really!"

Step 1

Salad: Add greens to a large salad bowl. Mix well.

Step 2

Add peppers, onions, artichokes, Pepperocini peppers, tomatoes and black olives. Mix well with salad forks, or with your hands.

Step 3

Season with salt and pepper.

Step 4

Make dressing.

Step 5

Dressing: Mix oil, vinegar, sugar, thyme, dry mustard and garlic together well in a bowl with a whisk. Add to salad mix right before serving, and mix well with salad forks.

Step 6

Add Parmigiano Reggiano, if using.

Step 7

Top with croutons, right before serving.

I was so happy to try this salad. It looked so good with all the different ingredients. I really loved the addition of the different greens together with the artichokes and pepperoncini peppers. The salad dressing had just enough zing to compliment the rest of the ingredients and the salad tasted so good! My family loved having a different salad to try and told me how much they loved it. My son wanted to bring home the leftovers and my husband said we can keep this in the fridge all the time. It doesn't get much better than that for compliments!
