Linda's Crispy Baked Potato Wedges

"This recipe is one that I have been making for many years, and they are a great side to just about any meal. Makes approximately 32 wedges."

Step 1

Preheat oven to 425 degrees. Spray baking sheet well with cooking spray. Set aside.

Step 2

Put potatoes in a large bowl, and cover with cold water. Let them sit in the water for 15 minutes.

Step 3

Drain potatoes in colander, then spread out on a towel and pat dry. Transfer potatoes to large bowl.

Step 4

Sprinkle with the rest of the ingredients. Toss gently to combine.

Step 5

Arrange seasoned potatoes in a single layer on the baking sheet.

Step 6

Bake for 20 minutes. Turn potatoes, then bake 20 minutes longer.

Tips & Variations

No special items needed.


Excellent choice to go with fried chicken! These baked up crunchy on the outside and soft and creamy on the inside. Tasted great too dipped in ketchup of course!

I doubled this recipe, to use with our fish for a good Friday dinner. This is a great way to make wedges, it was enjoyed by all, and even though I double the recipe, everyone could have eaten more! We all really enjoyed these wedges and will be making them again.

I made this recipe on 10/29/13 for the " Billboard Recipe Tag " in the Games Forum. Even though I only used 2 medium sized potatoes and kept the full amount of seasonings,this recipe was made as written. Unfortunately they didn't turn out as crispy as we had expected,but we really enjoyed the taste. These wedges went very well with the Salmon Patties we had.
