Step by Step Method

Step 1

Bring a pot of lightly salted water to boil.

Step 2

Sprinkle turmeric over the water and stir in orzo.

Step 3

Return to boil and cook until cooked through but still al dente, and drain.

Step 4

Heat skillet over medium heat and add olive oil.

Step 5

Cook the garlic in the hot oil for a few seconds until it starts to bubble.

Step 6

Add the kale and stir for a few seconds.

Step 7

Add the chicken broth and continue cooking until leaves are cooked through, about 10 minutes.

Step 8

When chicken broth has reduced, remove from heat and add the orzo, lemon juice, nutmeg, parmesan and salt and pepper to taste.

Step 9

Serve at once, warm or at room temperature.

This is a great side dish that we all enjoyed. Easy to make and will go with so many things -- we had it with chicken. Leftovers I think would also be great cold for lunch. Thanks for sharing!

Smells Like Salad

This easy side dish was served with a simple herb omelet and it worked out well. I lightly browned the orzo in olive oil and used freshly grated turmeric and vegetable broth. Once the orzo was cooked I placed it in a serving bowl covered and then heated up more olive oil and quickly sauteed the kale and garlic just until the kale started to wilt and the garlic became fragrant-less than 1 minute. To finish I grated the orzo with freshly grated nutmeg and used freshly grated asiago for the Parmesan. It was good, it was quick and it was simple! Made for Best of 2015.

I enjoyed this a lot but for hubby who is not a big veggie eater the kale did not get high marks. The kale reminded me of spinach and loved the lemon juice both with the kale and orzo. A light side dish for grilled chicken breast. Made and reviewed for the Billboard Recipe Tag game.

Wonderful combination! I had this with some pecan crusted fish, and it was perfect. Love having another way to use kale....have a friend growing it and I seem to have an abundant supply. Thanks for sharing! Made for Billboard tag game.

I eliminated the nutmeg but it still tasted great. We loved it with the spinach stuffed chicken and they tasted great together. This is a great way to serve kale. I got compliments on the meal from my kids and hubby so it's been added to my recipes to have again.
