Step by Step Method
Step 1
In large salad bowl combine the salad ingredients; arugula, beans, onions and capers.
Step 2
In separate bowl mix together the dressing ingredients; lemon juice, maple syrup, and lemon zest.
Step 3
Slowly whisk the olive oil into lemon mixture.
Step 4
Season with salt and pepper to taste.
Step 5
Pour the dressing over the salad, toss and serve immediately!
