Step by Step Method

Step 1

Peel away tough outer leaves from lemongrass and trim the base and cut the stalk in half lengthways and with the flat side of a large knife, press on the white part of the stalk to bruise it.

Step 2

Trim pieces in length to extend above rim of two glass tumblers and place in tumblers with mint.

Step 3

Combine bourbon and juice in a small jug and then divide between tumblers.

Step 4

Just before serving, divide crushed ice between tumblers and top with ginger beer and garnish with extra mint leaves.

Love that it's not a sweet drink, but not tart either. I'm not a big fan of Bourbon, but loved this drink! Didn't taste much of the lemongrass, next will bruise another stalk and muddle it in the glass, then remove it. I did muddle the mint a little bit, as I wanted to flavor to infuse the drink. It was wonderful!!!
