Step by Step Method

Step 1

Preheat the oven to 225 degrees F.

Step 2

In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt.

Step 3

In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest.

Step 4

Make a well in the center of the dry ingredients.

Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined.

Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.

Step 12

Repeat with remaining batter.

Step 13

Serve warm with maple syrup.

  • Be sure to use fresh lemon zest for the best flavor.
  • If you don't have vegetable oil, you can use melted butter instead.

  • Substitute oats for all-purpose flour - Oats are a great source of fiber and provide a nutty flavor. This substitution can help add nutrition to the waffles and make them a bit heartier.
  • Substitute coconut oil for vegetable oil - Coconut oil has a higher smoke point than vegetable oil, making it a healthier option. The coconut oil will also impart a subtle coconut flavor to the waffles.

Chocolate Chip & Coconut Waffles Replace the walnuts with 1 cup of semi-sweet chocolate chips and 1 cup of shredded coconut. Replace the lemon extract with vanilla extract and omit the lemon zest.

Fruit Salad with a Honey-Lemon Dressing - This fresh and light fruit salad complements the richness of the waffles perfectly. The honey-lemon dressing adds the perfect amount of sweetness and zing, making it the perfect accompaniment for the Lemon & Walnut Waffles.

Maple-Glazed Bacon: This sweet and savory side dish is perfect for adding a salty and crunchy contrast to the light and fluffy waffles. The maple glaze brings out the nutty flavor of the walnuts and the lemon in the waffles, while the bacon adds an extra layer of flavor and texture.
