Step by Step Method
Step 1
Mix butter, icing sugar, and lemon extract
Step 2
Blend in flour and salt. If dough is too soft, cover and chill

Heat oven to 400
Step 4
Shape dough by level teaspoon into balls
Step 5
Place 1 inch apart on an ungreased baking sheet and flatten slightly

Bake 8 to 10 minutes
Step 7
Immediately remove from baking sheet and cool

To make filling: combine sugar, cornstarch and salt in a medium saucepan, stir in water. Cook stirring constantly until mixture thickens and boils. Boil 1 minute. Remove from heat and stir in butter, lemon peel, lemon juice and coloring.
Step 9
Place cookies together in pairs with filling
Step 10
Roll in icing sugar
