  • 1 cup butter, softened
  • 1/2 cup icing sugar
  • 1 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • FOR FILLING
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • Salt, dash
  • 1/2 cup water
  • 2 tablespoons butter
  • 2 teaspoons grated lemon peel
  • 3 tablespoons lemon juice
  • 3 drops yellow food coloring

How to Make

  • Step 1: Mix butter, icing sugar, and lemon extract

  • Step 2: Blend in flour and salt. If dough is too soft, cover and chill

  • Step 3: Heat oven to 400

  • Step 4: Shape dough by level teaspoon into balls

  • Step 5: Place 1 inch apart on an ungreased baking sheet and flatten slightly

  • Step 6: Bake 8 to 10 minutes

  • Step 7: Immediately remove from baking sheet and cool

  • Step 8: To make filling: combine sugar, cornstarch and salt in a medium saucepan, stir in water. Cook stirring constantly until mixture thickens and boils. Boil 1 minute. Remove from heat and stir in butter, lemon peel, lemon juice and coloring.

  • Step 9: Place cookies together in pairs with filling

  • Step 10: Roll in icing sugar
