"This recipe is for the oil itself, but following there is a recipe for the dressing. The oil makes a nice gift when you put it in a pretty bottle with a nice raffia ribbon and a decoration. Write the recipe for the dressing on a tag and hang it on the bottle to give to a friend."

Step by Step Method

Step 1

Peel the lemons with a potato peeler being very careful not to remove the white of the lemon; place the peel only in a mortar with 1/4 cup of the above olive oil.

Step 2

Pound and rub for one minute or more; remove to a sterile jar or bottle and add the rest of the olive oil.

Step 3

Marinate for 4-6 days at room temperature; strain and discard peel.

Step 4

FOR THE DRESSING: Mix the Lemon-Olive Oil, mustard, and mayonnaise whisking all the time and put into your favorite salad or antipastso.
