Step 1: Peel the lemons with a potato peeler being very careful not to remove the white of the lemon; place the peel only in a mortar with 1/4 cup of the above olive oil.
Step 2: Pound and rub for one minute or more; remove to a sterile jar or bottle and add the rest of the olive oil.
Step 3: Marinate for 4-6 days at room temperature; strain and discard peel.
Step 4: FOR THE DRESSING: Mix the Lemon-Olive Oil, mustard, and mayonnaise whisking all the time and put into your favorite salad or antipastso.
