"This is a very easy and yummy lemon loaf. I really enjoy this with a nice cup of tea."

Step 1

In a large bowl mix the flour, sugar, baking powder, salt and lemon rind

Step 2

Add in milk, slightly beaten egg and butter and mix well. Add 2 or 3 drops of lemon juice and mix

Step 3

Pour into greased loaf pan and bake in preheated oven at 375 for 30-35 minutes

Step 4

Simmer sugar and lemon juice in saucepan for a few minutes to dissolve sugar. While loaf is still warm put on a dish and poke some holes on top with toothpick. Pour glaze over loaf and enjoy

I made this for the DH and he did find it a bit dry but was surprised it was not sweeter but the lemon taste came out and was pleasant to eat. As for the dryness I think that was because I had the oven a bit on the high side as it was ready in 30 minutes and the crack on one side indicates that the oven was to hot so will be making again but lower the temperature from 175C to 165C and hopefully that will take care of the problem.
