Step by Step Method

Step 1

In a skillet over medium high heat, heat the oil and then add garlic, cooking for one minute. Add next six ingredients (-pepper); toss. Cook for about 5 minutes or until tender. Reduce heat to medium-low.

Step 2

Make 4 indentations in the mixture and then crack one egg into a small dish and then slip egg into the indentation; repeat with remaining eggs. Cook, covered for 5-10 minutes or until whites are set and eggs are done. Remove from heat.

Step 3

To serve: drizzle eggs with butter and if you want lemon juice; top with herbs and goat cheese.

Wowzers! Didn't quite know what to expect, but this dish is exceptionally good! I used basil and parsley as the herb garnish, along with a squeeze of lemon juice. Doubled the garlic (just - because!). At the end, I covered the pan while the eggs cooked, but let them go a bit too long. This would be so much better if I had let the yolks remain runny. Regardless, this is a keeper and has made it to my Best of 2023 file. Thanks for sharing, Ellie!
