  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 (10 -12 ounce) zucchini, spiraled
  • 1 (10-12 ounce) yellow summer squash, spiraled
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 eggs (chicken or duck eggs)
  • 2 tablespoon butter, melted
  • 1/2 cup chopped herbs (your choice: suggestions parsley, basil, oregano, dill)
  • 2 ounces goat cheese, crumbled

How to Make

  • Step 1: In a skillet over medium high heat, heat the oil and then add garlic, cooking for one minute. Add next six ingredients (-pepper); toss. Cook for about 5 minutes or until tender. Reduce heat to medium-low.

  • Step 2: Make 4 indentations in the mixture and then crack one egg into a small dish and then slip egg into the indentation; repeat with remaining eggs. Cook, covered for 5-10 minutes or until whites are set and eggs are done. Remove from heat.

  • Step 3: To serve: drizzle eggs with butter and if you want lemon juice; top with herbs and goat cheese.
