Step 1: In a skillet over medium high heat, heat the oil and then add garlic, cooking for one minute. Add next six ingredients (-pepper); toss. Cook for about 5 minutes or until tender. Reduce heat to medium-low.
Step 2: Make 4 indentations in the mixture and then crack one egg into a small dish and then slip egg into the indentation; repeat with remaining eggs. Cook, covered for 5-10 minutes or until whites are set and eggs are done. Remove from heat.
Step 3: To serve: drizzle eggs with butter and if you want lemon juice; top with herbs and goat cheese.
