Great way to jazz up your olives for tapas and to give them some tang. It marinates surprisingly quickly - in flavor, spiciness and vinegar. Not sure if it would make a difference, I can get a really good Manzanilla pitted, so that is what I used. I think it is key to use good olive oil. I used thyme and fresh parsley for the herbs, to keep it Spanish. We have eaten at La Boqueria in DC and loved it, so I was really excited to see a recipe from there.
