Step by Step Method

Step 1

Preheat oven to 350°.

Step 2

Set aside cheese packets from dinner mixes.

Step 3

In a medium pot, cook macaroni (from the box) 8-10 minutes or until tender.

Step 4

Meanwhile, in a Dutch oven, cook and stir beef and onion over medium heat 10-12 minutes or until beef is no longer pink; drain. Stir in tomatoes, tomatoes and green chilies, tomato sauce and next 6 seasonings seasonings.

Step 5

Drain macaroni; add to beef mixture. Stir in contents of both cheese packets, sour cream and 1 cup cheddar cheese.

Step 6

Transfer to a greased 13x9-in. baking dish; top with remaining 1 cup cheddar cheese.

Step 7

Bake, uncovered, 20-25 minutes or until bubbly.

This sounded good, but tasted even better. I did make some adjustments for our tastes and dietary reasons, but it still came out wonderful. This is what I changed: quartered the meat/garlic powder, halved the tomatoes/sour cream/chili powder/salt/pepper and omitted the tomato sauce/extra cheese/baking stage. It came out a little spicy with great flavor - a definite repeat meal. This served 3-4 with my adjustments.
