Step by Step Method

Step 1

Place a frying pan on medium heat.

Step 2

Once the frying pan is hot, add-in the sesame oil.

Step 3

Add in crab meat, jalapeno pepper and green onions.

Step 4

Cook until hot and peppers are tender.

Step 5

Then crack in 3 eggs.

Step 6

Use your chopsticks and carefully scramble only the egg whites, be careful not to pop the egg yolks!

Step 7

Once the egg whites are scrambled, turn off the heat.

Step 8

Then measure soy sauce (3/4 tablespoon) and place it around the pan.

Step 9

Now poke the yolks with your chopstick and quickly mix it into the sizzling soy sauce.

Step 10

Give the yolks about 10 seconds to cook in the residual heat & sauce.

What a great dish! It tastes like restaurant fried rice...without the rice. I made a smaller portion with just 2 eggs and a little less green onions but I did not change the rest. Super fast and delicious. I will definitely make it again.
