Kool-Aid Lemon Poppy Seed Muffins
"Lemon Poppy Seed Muffins made with a packet of Lemonade Kool-Aid. I made these muffins for my children to take to school to help their class celebrate Nebraska's 156th birthday on March 1, 2023. Kool-Aid is Nebraska's State Soft Drink and it felt appropriate for the occasion. The kids were delighted these muffins had Kool-Aid as an ingredient and it fit the theme. I re-made the muffins and jotted down the ingredients as I went, so I could keep the recipe. I was surprised by how tasty they are. My daughter helped me create this recipe and she dumped everything into a bowl and we mixed until the batter just came together. Since it worked, I didn't make any adjustments to her chaotic dump and stir muffin mixing method."

Step by Step Method

Preheat oven to 375°F.

Line muffin tin with liners.
Step 3
Combine all of the ingredients in a bowl and stir until combined. Do not overmix.
Step 4
Fill muffin liners about 3/4th of the way full.
Step 5
Bake 20-25 minutes, or until a toothpick inserted in the center of the muffin comes out clean.
