December 02, 2019
"There's a few things that must be followed in order to achieve fluffy texture so please pay attention to the directions :) The garlic and onion powder may be omitted I add them in because I like my dumplings with flavor. You can add in any dry spice you like"

NOTE--- IMPORTANT! broth MUST be light simmering when adding in the dumpling dough and make sure to keep broth simmering during adding of dough. 2) Your pot must be at least 4 liters and minimum 10 inches wide as these more than double, if your pot is too small your dumplings will not expand and will end up tough. 3) Your finger must be oiled to push the dough off the spoon. 4) Work fast to drop in dough. 5) top with a tight fitting lid..DO NOT REMOVE THE LID during cooking time
Have a small bowl filled with a few tablespoons of oil (for your finger).
In a small bowl, whisk the two eggs. Add in the buttermilk and whisk vigorously until well combined.
In another medium bowl, measure/add all the dry ingredients; mix them well.
Add the buttermilk/egg mixture to the dry; using a fork combine JUST until the dry ingredients are mixed with the wet (do not over-mix!)
Have your broth simmering (MUST BE SIMMERING!).
Scoop about a tablespoon of dough onto a spoon and push it off into simmering dough using your oiled finger. Continue working as quick as possible with remaining dough keeping the broth at a simmer at all times. When there is no more dough. Cover the pot with a tight-fitting lid. Bring to a med-low simmer and simmer for 30 minutes. NO LIFTING THE LID DURING THE 30 MINUTES!
If you follow this process you should have ultra fluffy delicious dumplings.
