"This chili is packed full of flavor and so quick and easy to make. Great cold weather dish and for friends over to watch the game. You may substitute a bell pepper for the jalapeno if you prefer a milder version. this can be made ahead and reheated when time to serve, or it can be frozen and reheated."

  • When selecting jalapenos, choose ones that are bright green and firm for the best flavor.
  • If you don't have Mexican oregano on hand, you can substitute regular oregano.

  • Substitute bell pepper for jalapeno for a milder version: This substitution will reduce the spiciness of the chili, making it more suitable for those who prefer a milder flavor.
  • Substitute black beans for cannellini white kidney beans: This substitution will add a different flavor to the chili and a different texture, making it more interesting and enjoyable.

Vegetarian Version Substitute vegetable broth for the chicken broth and omit the chicken. Add an additional can of beans to make up for the missing protein. Use vegan cheese for topping if desired.

Mexican-Style Version Substitute Mexican-style diced tomatoes for the regular diced tomatoes, and add 1/2 cup of salsa. Use a combination of black beans and kidney beans instead of all black beans. Add 1/2 teaspoon of chili powder and 1/4 teaspoon of cumin. Top with Mexican-style cheese or a combination of Monterey Jack and cheddar cheese.

Cheesy Cornbread: This cheesy cornbread is the perfect accompaniment to the Kick Off White Chili. It adds a delicious crunchy texture and pairs perfectly with the creamy chili. The cheese adds an extra layer of flavor, making it the perfect side dish.

Crispy Roasted Potatoes: Crispy roasted potatoes are a great side dish to pair with the Cheesy Cornbread and Kick Off White Chili. The potatoes provide a delicious crunch and contrast to the creamy chili. Roasting the potatoes in olive oil and herbs adds a savory flavor that complements the cheesy cornbread. The potatoes are also easy to prepare and can be cooked in the same oven as the chili and cornbread, making them a great time-saving side dish.

I used only 1 jalapeno without the seeds so it wouldn't be too hot and it worked perfectly for me. This is a great chili that I plan to make over the winter. It's always good and comforting no matter when you have it. I served it with crusty French bread on the side.  Thank you for sharing this with us Nancy!  Linda
