Kale, Cranberry, Orange & Feta Salad

"This recipe was given to me by my Hairdressers. They said it is fabulous and they have very good tastebuds! We really enjoy the nutty citrus flavour. Lovely use of Kale. You may make the salad hours in advance and let the flavours meld. I serve it chilled from the fridge but you may serve it at room tempurature. I cut way back on the oil."

Step 1

In a medium container with lid or a zip lock bag combine the shallot,redwine vinegar, orange juice and olive oil

Step 2

In a bowl mix together the prepared kale, orange segments, nuts and feta cheese

Step 3

Season with salt and pepper

Step 4

Add the vinaigrette, use only as much as you need.

I loved this salad!!! I made this ahead and packed it away for work lunches and it was not soggy at all. The kale maintained it's crispness and the dressing flavored everything perfectly. I did make one small change by using grapefruit instead of oranges.

I doubled this to take to a potluck and it was a big hit. I especially liked the dressing and the different nuts. Will be make this again (in smaller quantity :) )
