Ingredients

The ingredients are:
  • 1/2 pound kale (1 bunch curly kale, 5 cups dressed, center stem removed, leaves rolled thinly cut into strips)
  • 1/4 cup pine nuts
  • 1/4 cup walnuts (toasted, roughly chopped)
  • 1/4 cup almonds (toasted, roughly chopped)
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/2 cup cranberries, dried (preferably unsweetened)
  • 21 ounces oranges, whole (3 large oranges, peeled, pith removed, separated into segments)
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 3 tablespoons shallots (peeled, finely chopped)
  • 1 tablespoon vinegar (red wine vinegar)
  • 3 tablespoons orange juice (fresh)
  • 1/3 cup olive oil (extra virgin olive)

How to Make

  • Step 1: In a medium container with lid or a zip lock bag combine the shallot,redwine vinegar, orange juice and olive oil

  • Step 2: In a bowl mix together the prepared kale, orange segments, nuts and feta cheese

  • Step 3: Season with salt and pepper

  • Step 4: Add the vinaigrette, use only as much as you need.

  • Step 5: Serve
