  • When choosing the pineapple, make sure to use crushed pineapple in juice, not syrup.
  • Toasting the walnuts will bring out a richer flavor in the cake.

  • Use coconut oil instead of margarine for the cream cheese frosting. Coconut oil has a high smoke point, making it a healthier alternative to margarine. It also adds a subtle coconut flavor to the frosting.
  • Substitute crushed pineapple with mango for added sweetness and a tropical flavor. Mango is high in vitamins A and C, and can also help to add a unique flavor to the cake.

Chocolate Chip Mexican Fruit Cake Replace the walnuts with 1 cup of semi-sweet chocolate chips and add 1 teaspoon of ground cinnamon to the cake batter before baking.

Mexican Street Corn Salad - A delicious side dish to accompany the Mexican Fruit Cake, this Mexican Street Corn Salad combines grilled corn, creamy mayo, tangy lime juice, and a kick of chili powder for a flavorful and colorful side dish.

Chile-Lime Cilantro Rice: This flavorful side dish pairs perfectly with the Mexican Street Corn Salad. It is made with white rice, cilantro, fresh lime juice, and a hint of chili powder to give it a spicy kick. The combination of the chili powder, cilantro, and lime juice creates a delicious and unique flavor that complements the Mexican Fruit Cake.
