Step by Step Method
Step 1
Put beans and water in large kettle with red chili pepper and chopped roasted green chili peppers, onion, garlic, sage, cumin and bay leaf.
Step 2
Simmer about 30 minutes, stirring often to prevent burning.
Step 3
Add dried beef torn in hunks and cook 15 minutes longer.
Step 4
Add water if needed
Step 5
Season to taste, adding more sage and cumin if needed, salt and pepper to taste.
Step 6
(Remove bay leaf and red chili pepper pod)
