Step 1: Put beans and water in large kettle with red chili pepper and chopped roasted green chili peppers, onion, garlic, sage, cumin and bay leaf.
Step 2: Simmer about 30 minutes, stirring often to prevent burning.
Step 3: Add dried beef torn in hunks and cook 15 minutes longer.
Step 4: Add water if needed
Step 5: Season to taste, adding more sage and cumin if needed, salt and pepper to taste.
Step 6: (Remove bay leaf and red chili pepper pod)
