Step by Step Method

Step 1

In a pot brown the sausage slices. Remove to a plate. Add in bacon; cook until browned. Add in onion and spicy flakes; cook until softened. Add in garlic; cook 1 minute.

Step 2

Add the browned sausage back to the pot along with water, broth, kale and potatoes and 1/2 cup heavy cream; bring to a boil. Reduce heat and simmer until potatoes are tender (about 20 minutes).

Step 3

Using a potato masher mash some potatoes to thicken up the liquid. Add in remaining 1/2 cup heavy cream and Parmesan cheese, cook stirring until heated through. Season with salt and pepper.

This was so good on a cold day! I used hot Italian sausages so I skipped the chili flakes. I also ran out of whipping cream, so used about half heavy cream and half skim milk and forgot the parmesan -- still a very hearty soup which we all enjoyed! Thanks for sharing!

I can see why you love this soup so much. I have had a cold and soup sounded so good. It was cold here yesterday and I made it hoping I would feel better. It did open up the airways lol. This kind of reminds me of a soup my Portuguese sister in law used to make, only this had even more flavor. I will be making this again soon.
