"You can use either mild or spicy sausage for these meatballs. At the end of the instructions, there are two ways of finishing the meatballs. Cook time is estimate as to how you finish them. These make 24 meatballs depending how big you make them."

Step by Step Method

Step 1

Place fresh bread crumbs in a small bowl and pour milk over crumbs; let stand for 5 minutes or until crumbs have absorbed milk.

Step 2

In a large bowl, combine crumbs with all remaining ingredients, except olive oil.

Step 3

Mix well (using your hands works best).

Step 4

Shape meat mixture into uniform-sized meatballs (Tip: pack meat mixture into 1/3 cup measuring cup and use this amount for make 2 meatballs).

Step 5

Heat olive oil in a deep, non-stick 14" skillet.

Step 6

Add meatballs and cook over medium-high heat until lightly browned on all sides being careful not to break them.

Step 7

To finish #1:

Add 2 jars (about 6 cups/1.5L) of your favourite tomato pasta sauce to the skillet.

Step 9

Reduce heat, cover and simmer until meatballs are cooked through, about 25 minutes.

Remove meatballs from skillet and transfer to a large baking pan.

Step 12

Bake meatballs at 400F for about 20 minutes or until cooked through.

Meatball consistency came out like they were made using paper paste. The recipe calls for way too much bread crumb. It looked like too much, but I just followed along. Made a 2x batch which results in 3 cups of crumbs to 3 lbs of meat. Other recipes are easily 1/3 that much, if not less. They didn't taste terrible, bit the consistency was unacceptable. This was for a small birthday party and I had to throw them out and substitute ground beef to complete the dish. Food and party turned out fine. Furthermore, the recipe calls for salt and pepper "to taste". This recipe had 3 lbs raw meat and 2 raw eggs, I'm not tasting that before they are already cook. A standard measurement to work for more novice cooks would be helpful. Adjusting the crumbs to half a cup would probably yearly decent results. Perhaps using Italian bread crumbs, or adding basil and oregano would enhance the flavor.

This recipe was made for " Billboard Tag ", " Alphabet Soup Tag ",and the " What's On The Menu ? games. Due to what was on hand a few changes were made,and they are as followed. The first change was ,using dried breadcrumbs instead of the whole grain. Had to use dried parsley and dried garlic instead of what was called for. Then I continued with the rest of the recipe as it was written. After lightly browning the meatballs,I added a jar of sauce and let them simmer on low for about 30 minutes. They were served over Angel Hair pasta, and of course had to have garlic bread(BTW: I just LOVED your idea on how to make the meatballs a perfect size.). We both enjoyed the taste very much. :) Thanks for taking the time to make and post this recipe so others could enjoy it. " Keep Smiling :) "

This meatballs are amazing. Very flavorful, perfect amount of seasonings. I followed the recipe to a T. I wouldn't change anything.

I cut the recipe down to half the amount, and I tried to cut some calories on these little babies, and it turned out well, if I do say so myself... First I used Mild Turkey Sausage, and removed the skins. Secondly, I omitted the oil and baked the meatballs in the oven for 25 minutes at 350 degrees F. I set them on a cookie rack so the fat dripped into the pan below. I used Hunts No Sugar Added Sauce and added in onions, garlic, fresh basil, Italian Seasoning, mushrooms and a couple of dashes of hot sauce, then added the meatballs and let them simmer for an hour or so. I had the sauce and meatballs over Shirataki Noodles for a great supper! Thank you for sharing it with us Patti! Linda
