We loved this version of potato salad! I do think the amounts need to be adjusted - 1/2 pound of potatoes for 4 servings seems too little. I used 4 small red potatoes and they weighed 13 ounces - about 3/4 pound. Then the rest of the ingredients were used in stated amounts. DH and I each had a serving with enough left over for tomorrow. Yum!

Oh, what a great potato salad this is! We love the flavor combinations, crunch from the celery, slight zing from the pickles, the roasted flavor of the potatoes. Yum! This is a keeper. Note: I just baked my potatoes (double the amount - then increasing all other ingredients, too) at 350 degrees for 1 hour. Let them cool slightly, then peeled the skins off and sliced them. It seemed to work pretty well. The slices weren't perfect, but it didn't really matter. This is a great potato salad version that I will make again! Thank you!
