Heat oil in stock pot

Saute onion celery and carrots

Very good! Some people may think this is nuts, but I made this on one of the hottest days of the summer and it was great! I used 3 chicken bouillon cubes rather than regular salt, b/c it was a little bland when I tasted it. Some lentil soups don't have noticeable veggies, which is why this one is so appealing. I added some cut up canadian bacon, too. (DH thinks if there's no meat, it's not a meal!)
