Step by Step Method

Step 1

Heat oil and sweat onion, celery and carrots.

Step 2

Add mushrooms, garlic, stock, barley and herbs.

Step 3

Season to taste.

Step 4

Simmer for 45 minutes adding water as needed.

Step 5

Stir occasionally.

Step 6

Then add peas and parsley and simmer 10 minutes more.

Step 7

Season to taste

This is a great thick soup which we enjoyed. I skipped the celery but added celery seed but otherwise made as directed except I used 5 cups of vegetable broth. Delicious with rolls for a light supper! Thanks for sharing!
