Step 1: Heat oil and sweat onion, celery and carrots.
Step 2: Add mushrooms, garlic, stock, barley and herbs.
Step 3: Season to taste.
Step 4: Simmer for 45 minutes adding water as needed.
Step 5: Stir occasionally.
Step 6: Then add peas and parsley and simmer 10 minutes more.
Step 7: Season to taste
