  • 1 tablespoon oil
  • 1 cup carrot, diced
  • 1 cup onion, diced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic ,minced
  • 2 stalks celery, diced
  • 6 ounces quick pearled barley (3/4 cup)
  • 2 sprigs thyme
  • 1 bay leaf
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 cups vegetable stock
  • 1/2 cup frozen green peas
  • 2 tablespoons parsley, minced

How to Make

  • Step 1: Heat oil and sweat onion, celery and carrots.

  • Step 2: Add mushrooms, garlic, stock, barley and herbs.

  • Step 3: Season to taste.

  • Step 4: Simmer for 45 minutes adding water as needed.

  • Step 5: Stir occasionally.

  • Step 6: Then add peas and parsley and simmer 10 minutes more.

  • Step 7: Season to taste
